Chef E. Michael Reidt left his post as top toque at Miami Beach's Wish and moved to Santa Barbara, California, to open a place of his own. The 78-seat Sevilla, housed in the former site of Casa de Sevilla at 428 Chapala Street, opened in December.

The ball droping in Times Square may have marked the official end of 2004, but for many food cognoscenti the true grand finale was signaled by the last dinner at Le Cirque 2000. There, some 500 patrons paid $500 each to celebrate the final moments of this public club for the rich and famous at a gala dinner awash with Champagne and punctuated by caviar, lobster, foie gras, and generous shavings of white truffles.

Later this winter, David Bouley will open his multilevel Bouley Bakery & Market, at 130 W. Broadway, in Manhattan, just across the street from his restaurant, Bouley. The ground floor bakery's made-in-Spain wood-burning brick oven will turn out breads, pastries, and pizzas.

After 17 years in an old Rockefeller residence at 13 W. 54th St. in Manhattan, Marcus Samuelsson and Håkan Swahn (Townhouse Restaurant Group) decided what Aquavit needed from Santa was a fresh venue. On Christmas Eve, they served a farewell meal in expectation of unwrapping shiny new premises at 65 E.

Atlantic City's Tropicana Casino and Resort completed its $280 million, Las Vegas—style expansion in November with the addition of The Quarter. The three-story streetscape, a faithful re-creation of the Beaux Arts-meets-bongos splendor of Old Havana, circa 1950, is the vision of Newport Beach, CA—based Wimberly Allison Tong & Goo.

The Livanos family of Manhattan's Oceana and Molyvos restaurants, together with managing partner Paul McLaughlin and chef/partner Jim Botsacos, unveiled Abboccato (Italian for both "pleasing to the mouth" and "semisweet wine"), at 138 West 55th Street, in October.

Las Vegas will make way for another resort next April when Stephen Wynn opens Wynn Las Vegas at the site of the former Desert Inn. The dazzling new venue will boast 2,700 rooms and suites, a casino, an 18 hole golf course, luxury shopping, and, of course, loads of fabulous restaurants, among them Daniel Boulud Brasserie.

Executive Chef Laurent Gras sent shock waves throughout the San Francisco dining scene in October when he left Fifth Floor. He plans to move back to NYC. "The Fifth Floor and San Francisco have been a great experience for me," Gras notes.

For the first time since the Kennedy administration, the White House has an American born exec pastry chef. In September, Thaddeus R. DuBois (formerly of the Borgata Hotel Casino & Spa, Atlantic City, NJ) replaced French born Roland Mesnier, who had created presidential confections since 1979.
